Biokaas Kinderdijk is a fully organic farm and cheese factory on the Molenkade in Alblasserdam. Here, cheeses are produced organically. Moreover, the cheeses are also vegetarian as only vegetarian rennet is added during the production process. So for the true environmental enthusiasts among us this is a big plus. But also for people with a cow's milk allergy. For the production of the A2A2 extra matured cheese, Biokaas Kinderdijk only uses mature milk from selected cows with the A2 gene. This is because the A2 gene does not contain the substance BCM-7. And let it be precisely this substance that causes a cow's milk allergy.
